You can make lemon blueberry mimosas any time you like, but they’re especially refreshing for spring and summer parties. Whip up a batch for Easter parties, Mother’s Day brunch, bridal showers, and July 4th for a festive and tasty champagne cocktail.
What Makes Blueberry Lemonade Mimosas So Awesome
- It’s fruity, but not too sweet. The combination of blueberry syrup and lemonade add a delicious tartness without being overpowering.
- It’s pretty! I can’t get enough of the pretty reddish-purple hue of this drink. It really pops – especially if you add a fresh lemon slice.
- It’s simple. While it takes a bit more work than your traditional quick and easy mimosa, once the syrup is finished, it’s super easy to assemble.
- Easily adjusted to your taste. The recipe shared below is more like a guideline. But feel free to adjust the amounts of syrup, lemonade, and champagne to suit your tastes.

Make the Blueberry Simple Syrup
In a medium sauce pan, combine water and granulated sugar. Turn your burner to medium, and heat the mixture until the sugar is dissolved.
Add frozen blueberries to the simple syrup. Bring to a boil, stirring and lightly mashing the berries with your spoon.
Boil for 5-6 minutes, until the syrup is reduced and coats the back of a spoon.
Use a fine mesh strainer to remove the blueberries and pulp from the syrup. Transfer the syrup to an airtight container and cool completely before serving.
To Make Your Blueberry Lemonade Mimosa
Add prepared blueberry syrup to a champagne flute.
Pour lemonade about halfway up the champagne flute.
Top with an additional 3 ounces champagne.
Garnish with fresh blueberries and/or lemon slices

Strain the Blueberry Simple Syrup into a large bowl first
The first time I made the blueberry syrup, I tried straining it directly into a wide mouth mason jar – and it was a huge mess!
You’ll need a strainer big enough to hold the remaining blueberries, which is likely to be larger than the size of a mason jar opening. And as the blueberries go into the strainer, it becomes difficult to control where the liquid goes. Which means it goes everywhere.
I find it’s best to strain directly into a large bowl with a pour spout or a 4-cup liquid measuring cup. Then transfer the liquid to your mason jar after everything is strained out.
How to Make Blueberry Lemonade Mimosas for a Crowd (Should you make a big batch?)
While you can mix up a big batch of these mimosas, I wouldn’t recommend it. You run the risk of having a flat cocktail…and half the fun of this drink is the fizziness from the sparkling wine!
Instead, here’s how I recommend to make lemon blueberry mimosas for a crowd:
- Make the blueberry syrup a day or two in advance and let it cool completely
- Once cooled, transfer the blueberry syrup to a bottle with a pour spout (something like this)
- Set up a DIY mimosa bar with a large ice tub to hold your lemonade and sparkling wine. Place the bottle of syrup nearby.
- Set up a sign with the blueberry lemonade mimosa recipe (you can find pretty blank signs here) and let your guests be their own mixologists.
The best part of creating a DIY mimosa bar is that your guests can make their drinks as sweet or tart as they prefer.

Substitutions and Adaptations:
This cocktail is delicious on its own, but it’s also a great starting point for you to customize with some variations.
- Blueberry Syrup – If you want, you can make several versions of this simple syrup with other frozen fruits. Mango, peach, raspberry, and strawberry, and blackberry all pair well with lemonade.
- Lemonade – I prefer the bright citrusy flavor of lemon for this beverage, but you can experiment with other citrus juices too. Or, if you want to cut calories, you can also use a low calorie lemonade.
- Sparkling wine – We used Gloria Ferrer, but you can use any mid-tier sparkling wine or Prosecco. Or, for a non-alcoholic variation, you can use club soda, sparkling water, lemon lime soda, or ginger ale.
- Add some herbs – Yes, really! Garnish with a sprig of food grade lavender, basil, or mint for a flavorful twist.

Yes! It should taste just as delicious if you use fresh blueberries. Though you may find that you don’t need to simmer the mixture quite as long to get your simple syrup.

By the time the syrup is reduced, you will have between 1.5 to 2 cups of blueberry syrup. This should be enough for at least 12 blueberry lemonade mimosas.

Storing Leftover Blueberry Syrup
Store any leftover blueberry syrup refrigerated in a sealed container (eg. mason jar) for up to 2 weeks.
Pro Tip: Freeze the blueberry syrup in ice cube trays.
Pour the liquid into ice cube trays and freeze until solid. When solidified, transfer to a zip-top freezer bag. Store in the freezer for up to 2 months.
This is a great way to keep the syrup on hand if you want to make one or two blueberry lemonade mimosas at a time. They also help to keep your mimosas nice and cold!
