Looking for a treat to beat the heat? We love anything with cold, but with allergies in our home, finding dairy-free desserts isn’t easy. So a long time ago I began freezing fruit and experimenting. You literally can make any “ice cream” out of frozen bananas, even dairy-free strawberry ice cream!

And though I love to bake and plan parties like Leslie’s amazing creations, sometimes we just like to keep things simple. I’m so excited Leslie asked me to share a recipe with you, because I’m all about making tasty yet healthy food.
When we found out our oldest had a dairy allergy as a baby I was devastated. I love to bake, eat ice cream, and pizza, how were we to give up dairy? Well I’ll tell you, it was surprisingly simple! I too have cut dairy, and find that we still can have delicious desserts. You are going to be astounded at how few ingredients you need to create such big flavor!
Start by freezing your fruit! (or just buy some!) I buy strawberries like crazy and wash and freeze them throughout the summer. I also freeze bananas for smoothies, so we had everything on hand to make a cool treat for the kiddos.
Then you just use your food processor and blend together frozen strawberries, bananas, coconut milk, vanilla, and if you need it super sweet you can use coconut crystals. But honestly, the result is so naturally perfect I find you don’t need the sugar. And the great thing about this recipe is you can add more bananas if you like that flavor more, or more coconut milk if you want a creamier texture! I use minimal milk though and prefer a sorbet. This is how it looks after a few hours in the freezer!

No-Churn Healthy Strawberry Ice Cream
This no-churn healthy strawberry ice cream is the perfect way to cool off on a hot summer day! And it only takes a few ingredients and a few minutes.
Ingredients
- 2 Frozen Bananas
- 2 Cups Frozen Strawberries
- 1/2 Cup Full Fat Coconut Milk
- 1 Tsp. Vanilla
Instructions
- Combine all ingredients in a food processor or Magic Bullet.
- Blend until smooth, then eat soft or freeze for a more solid texture!

I love the idea of adding coconut milk! I never thought of that. I have a thing called a Yonanas – basically it’s a device specifically for making “ice cream” out of frozen bananas. I’m definitely going to try adding in coconut milk. Thank you!
