Step-by-Step Directions:
To make things even easier for you, I created a simple photo guide below. For all measurements and a more detailed guide, check out the recipe card at the bottom of this page.
Step 1 – Place the spiral ham in a roasting pan or deep baking dish. Cover with aluminum foil. Cook in a preheated oven for about 10 minutes per pound (see FAQ below).
Step 2 – In a medium mixing bowl whisk together brown sugar, pineapple juice, melted butter, dijon mustard, minced garlic, and ground cloves.
Step 3 – 15-30 minutes before the ham is fully cooked, use a pastry brush to coat the ham with the glaze.
Step 4 – Use a spoon to drizzle a small amount of remaining glaze on top of the ham right when it comes out of the oven. Don’t forget to include whatever glaze is left on your table so people can add more glaze to their ham when serving. They’re gonna want it.
Essential Tips:
Don’t skip these tips – read them before starting to avoid any potential mistakes.
- Avoid using 100% pineapple juice or fresh pineapple juice straight from the fruit. It can mess up the texture, thanks to the enzymes in the pineapple. Stick to pineapple juices that are mixed with other ingredients for this recipe. (we like Cranberry Pineapple for Thanksgiving or Orange Pineapple for Easter Dinner)
- Feel free to use your preferred mustard, but avoid opting for a quirky or unusual flavor as it might overpower the glaze. Personally, I prefer dijon mustard in most cases, but of course, tastes may vary.
- Add a little extra spice with a dash of cayenne pepper or red pepper flakes.
- The glaze may seem grainy (that’s the dijon at work), but don’t worry, it will melt into the ham perfectly!
- Don’t be afraid to spread the ham slices a bit so the glaze can seep between them. This will ensure every bite is packed with flavor!
- Save any leftover glaze for later! It makes a delicious dipping sauce for ham sandwiches or even as a marinade for chicken or pork.
Frequently Asked Questions:
Yes! The glaze in this recipe will work for just about any type of ham. Don’t forget to adjust the cooking time accordingly. Spiral hams take less time to cook since they’re already sliced.
Absolutely! Just make sure to store it in an airtight container in the fridge and give it a good whisk before using. You can also freeze any leftover glaze and thaw it out when needed.
The general rule of thumb for cooking spiral sliced ham is 10 minutes per pound. So, for example, if your ham is listed as 7.65 pounds, then you would plan to cook it for about 76 minutes.
However, ovens vary, so it’s important to periodically check the internal temperature with a meat thermometer to ensure it’s cooked to 140˚F before serving.

How to Store Leftover Ham or Glaze
If you have leftover ham, let it come to room temperature before storing. Then place it in an airtight container in the refrigerator for up to 3-5 days.
To freeze leftover ham, wrap it tightly in freezer-safe plastic wrap or aluminum foil and store in a freezer-safe bag or container for up to 6 months.
As for the glaze, you can store it in an airtight container (we like canning jars) in the fridge for up to 2 week. Just give it a good whisk before using again.
