Step 1 – Cut the russet potatoes into thin, even slices, about 1/4 inch thick. Place the potato slices in a large bowl.
Step 2 – Toss potato slices with 3 tbsp olive oil.
Step 3 – Arrange the potato slices in a single layer on parchment covered baking sheets.
Step 4 – Bake the potato slices in a 350˚F oven for 15 minutes. Flip the slices over and bake an additional 15 minutes. Remove the potato slices when they are just starting to brown around the edges, about 30-40 minutes total. Sprinkle a layer of shredded cheese onto the potatoes, and return to the oven for 1-2 minutes, until cheese is melted.
Step 5 – Serve warm, topped with a small dollop of sour cream, bacon pieces, and green onions.

Use thinner potatoes
To get appetizers that are 2-3 bites: long, skinny potatoes are best.
Work in batches of 1-2 potatoes at a time
Potatoes that are exposed to air for too long turn ugly and gray. Working in smaller batches will make sure your loaded potato bites look their best.

How thick do you slice the potato?
I slice my potatoes slightly larger than 1/4 inch thick, but you don’t have to be too precise.
Somewhere between 1/4 inch and 1/2 inch thick is the sweet spot to ensure your slices are tender enough to eat, but are still firm enough to hold all your favorite toppings.
Can you make loaded potato bites ahead of time?
To make the last few minutes of party prep easier, you can make these potato slices (up to the point of melting the cheese) earlier in the day.
Refrigerate the prepared potato slices on the baking sheets until party time. When you’re ready to serve, gently reheat them in the oven for 3-5 minutes at 350˚F before topping and serving.
I do not recommend freezing the baked potato slices. These slices are just firm enough to hold the toppings, but freezing them will likely cause more softening to happen and they may fall apart.
Can I use homemade bacon?
Absolutely! I recommend that you cook your bacon a day or so in advance until it is nice and crispy. Then crumble it up to make your topping.

Loaded potato bites are the perfect easy appetizer. Crispy potatoes slices are piled high with cheese, sour cream, bacon bits and green onions for a delicious snack.
Ingredients
- 4-5 russet potatoes, washed well (see notes)
- 3 tablespoons Olive oil
- 1.5 cups Shredded Colby Jack cheese
- 3/4 cups Sour cream
- 3/4 cup pre-cooked bacon pieces
- 5 green onions, sliced thinly
Instructions
- Preheat your oven to 350˚F. Prepare two baking sheets with parchment paper.
