Step 1 – Squeeze lime juice into a cocktail shaker.
Step 2 – Add mint leaves and granulated sugar. Muddle together to release the natural oils from the mint.
Step 3 – Add white rum and coconut rum to the shaker.
Step 4 – Pour in coconut milk.
Step 5 – Add ice and shake to combine all the ingredients.
Step 6 – Pour into a cocktail glass, top with a splash of club soda, and garnish with a sprig of fresh mint, and a handful of fresh pomegranate arils.

- Give your coconut milk a shake before opening the can. The cream and milk often separate after sitting for a while. If you don’t shake up the coconut milk, you’re more likely to end up with curdling.
- Using an actual muddler will give you the best results when crushing the mint leaves, but if you’re in a pinch, you can also use the handle of a wooden spoon.
- Don’t want to go to the hassle of getting the seeds out of a pomegranate? You can often buy pomegranate arils in the store, but fresh cranberries also look just as beautiful.

Yes! If you’re looking for an easy and fun way to entertain a crowd during the holidays, making a large batch of White Christmas Mojitos is the perfect choice.
Here’s how to make a pitcher for 8:
Ingredients:
- 1/2 cup fresh lime juice (about 8 limes)
- 1/2 cup mint leaves
- 3/4 cup granulated sugar
- 1 cup Bacardi White Rum
- ½ cup Malibu coconut rum
- 2 cups coconut milk
- 6 cups ice
- 1-2 cups club soda
- Fresh mint for garnish
- Fresh pomegranate arils for garnish
Directions:
To a large pitcher, add lime juice, mint leaves, and granulated sugar. Muddle together to release the natural oils from the mint.

Can I Make a Nonalcoholic version?
Yes! The awesome thing about this recipe is that you don’t really need the alcohol to enjoy it.
Simply skip the rum, and swap the club soda for ginger ale, Sprite, or a coconut flavored seltzer water. Yum!
Do you use sweetened or unsweetened coconut milk?
For this recipe I use Goya unsweetened coconut milk. That way I can control the amount of sugar that is in the final recipe.
My family doesn’t like coconut? Can I substitute something else?
Substituting the coconut milk will definitely change the flavor of the mojito, making it slightly less tropical. But if you just don’t have coconut milk on hand, or your guests have dietary restrictions, you can replace the coconut milk with one of these options:
- Evaporated milk
- Cashew milk, or
- Half and half
Storage Tips/Freezing, Etc.
These mojitos are definitely best consumed right after mixing, but if you have any leftover, you can refrigerate it for up to a day. Just remember, the drink may separate and you’ll lose any fizziness if you already added club soda.
