I handed the margarita glass to my 8-year-old and asked her opinion. And then I waited.
And I waited, and waited.
Well, she did take a quick moment to say “I think it’s delicious” before continuing to down the entire drink in a matter of minutes.
When it was all gone, she grinned with that big, wide smile, and a pink sherbet mustache rimming her upper lip.
This is the girl that will end up with two or three half-finished cups in the refrigerator at the end of the day. The girl that struggles to finish even her favorite drinks in a single sitting.
I think it’s fair to say that this cherry ginger mock margarita recipe was a hit.
It could be the cherry cool-aid, or the ginger ale. But I’m betting it was the wreath shaped ring of sherbet in the center. All three are treats in our house, but if you can’t celebrate during the holidays then when can you?
This is definitely a large-batch recipe, so you’ll want to save it for a party with plenty of kids. Or, for a get-together with friends and family that want to enjoy a fruity half-drink, half-dessert.

Cherry Ginger Mock Margarita Recipe
Kids young & old love this cherry ginger mock margarita recipe. From the festive color to the sherbet wreath, it's the perfect holiday mocktail for kids!
Ingredients
- 1 pouch black cherry cool-aid
- 1/2 cup sugar
- 64 oz 2L cold water
- 1 liter ginger ale
- 2 48- oz containers of raspberry sherbet
Instructions
- Stir the sherbet to soften. You can do it by hand, but it is easiest in a stand mixer set to the lowest speed.
- Spoon the sherbet into a mini bundt pan and freeze for at least 2-3 hours to harden.
- Meanwhile, combine cool-aid, sugar and cold water in a pitcher. Add ginger ale and stir to mix well.
- When the ice cream is hardened, carefully run hot water over the bottom of the pan for a few seconds to loosen the sherbet molds. Be careful not to run the water too long, or the ice cream will start to fall out on its own.
- Flip the bundt pan upside down onto a cookie sheet to remove molded sherbet. Freeze on the pan until ready to serve.
- When ready to serve, place a single sherbet mini wreath in a cup and cover with cool-aid mixture.

One 12-cavity mini bundt pan will use the majority of a 48-oz container of sherbet. Only work with one container of sherbet at a time if you only have one pan available (or only have space for one pan at a time in your freezer). Previously softened sherbet will melt faster than the original container. Keep your mini wreaths in a closed cooler or in your freezer at the party and turn serving the drinks into a special event. Or make a large wreath in a single bundt pan, and serve in a punch bowl. To make a smaller batch, use a single container of sherbet and 2-liter of cherry ginger-ale. (You may need to add a drop or two of food coloring to make it red, however)
