Step-by-Step Directions:
To make things even easier for you, I created a simple photo guide below. For all measurements and a more detailed guide, check out the recipe card at the bottom of this page.
Step 1 – In a large microwave safe bowl, combine cubed butter and 8 cups mini marshmallows. Microwave on high for 2 minutes.
Step 2 – Remove the marshmallow mixture from the microwave and immediately stir until the marshmallows and butter are completely combined and smooth.
Step 3 – Fold in the remaining 2 cups marshmallows and 5 cups Lucky Charms. Stir until the cereal and marshmallows are fully covered.
Step 4 – Spread the cereal mixture to the prepared baking pan and gently spread until even.
Step 5 – Sprinkle the extra cup of Lucky Charms over the top and lightly press the dry cereal into the marshmallow mixture to help it stick.
Step 6 – Let the mixture rest for an hour or until set, then slice and enjoy!
Essential Tips:
Don’t skip these tips – read them before baking to avoid any potential mistakes.
- Not a fan of cooking spray? You can also use butter, Crisco, or even line the bottom of your pan with parchment paper.
- For extra thick treats, double the recipe or use an 8×8 pan.
- Press the treats lightly into the pan. If you press too hard, they’ll be so difficult to chew, which will completely ruin the experience.
- Cover your spoon or spatula with cooking spray or butter to keep the mixture from sticking.
- Measure everything out in advance. Cereal treats need to be made very quickly once the marshmallows are melted, so having everything measured out helps a lot.
Adaptations and Variations:
Want to change things up a bit? Here are some tasty ways to make these your own:
- Drizzle green candy melts on top for an extra St. Patrick’s Day touch.
- Add a few drops of green food coloring to the marshmallows before melting.
- Amp up the flavor with 1/2 teaspoon of vanilla extract in the melted marshmallows before adding in the cereal.
- Top the treats with rainbow or St. Patrick’s Day themed sprinkles
FAQs:
Help! My bag of mini marshmallows has less than 8 cups. What should I do?
The size of packaged dry foods (like cereal and mini marshmallows) is constantly changing. Sometimes a 10 ounce bag is enough, and sometimes I need more like 12 ounces to get 8 cups.
If you can’t squeeze out a full 8 cups of marshmallows from your bag, you can easily reduce or leave out the extra mini marshmallows when you mix in the cereal.
Can I make these treats on the stovetop?
Yes – follow the same recipe but instead of microwaving, melt the butter and marshmallows over medium-low heat on the stove.
Make sure to stir constantly until the marshmallows are mostly, but not completely melted. Then remove the mixture from the heat and continue stirring until they are fully melted. If you overcook the marshmallows, it can make your bars very difficult to chew.
How are these different from Rice Krispie Treats?
Lucky Charms treats are similar to other rice cereal treats – like these tasty Christmas Tree Rice Krispie Treats.
The biggest difference is that they only use Lucky Charms cereal, which is larger and doesn’t pack together quite as much. This means that they’re generally softer than other cereal treats, which makes them even better in my book!
Giving these away as gifts?
Lucky Charms treats make fantastic class gifts or party favors for St. Patrick’s Day. Add them to a zip top bag with a printable St. Patrick’s Day bag topper or another cute printable tag and you have the perfect festive gift!
Storage Tips
These snacks are best consumed with in 2-3 days, but you can keep your marshmallow treats at room temperature in an airtight container for up to 5 days.
