Make the Donuts
Step 1 – Combine the buttermilk and 1 cup of Fruity Pebbles cereal in a large bowl. Gently stir the mixture a couple of times before setting it aside.
Step 2 – In a separate large mixing bowl, thoroughly stir together flour, baking powder, and baking soda.
Step 3 – Crack a large egg into a small bowl or ramekin. Whisk it lightly and then add it to the buttermilk and cereal mixture. Stir in the oil, vanilla, greek yogurt, and melted butter. Mix thoroughly.
Step 4 – Add ⅓ of the dry mixture to the wet mixture. Stir to combine. Repeat, adding only ⅓ of the dry mixture at a time until everything is well combined.
Step 5 – Fill a greased donut pan with the batter. Each cavity should be about ¾ full.
Step 6 – Bake for 10 minutes at 350˚F or until the donuts’ tops spring back when gently touched.
Step 7 – Allow the donuts to cool in the pan for about 15-20 minutes.
Prepare the Glaze and Top the Donuts
Step 8 – While the donuts cool, combine the powdered sugar, milk, vanilla and strawberry extracts, and food coloring in a medium mixing bowl. Whisk until thoroughly combined.
Step 9 – Gently crush the remaining cup of Fruity Pebbles cereal. Set aside.
Step 10 – Gently remove the donuts from the pan. Carefully dip the tops of the donuts into the prepared glaze.
Step 11 – Move the glazed donuts to a piece of parchment paper, large plate, or a pan.
Step 12 – Quickly sprinkle the crushed cereal diagonally across half of each donut and enjoy!
Essential Tips:
Don’t skip these tips – read them before starting to avoid any potential mistakes.
- When filling the donut pan you can use a piping bag with a Wilton 2A tip. If you have anything similar that would also work, but you can also easily scoop it in.
- Tap the donut pan on the counter before putting it in the oven to level them out and reduce air bubbles.
- Be careful not to overfill the pan or your donuts will spill over and bake together.
- Start with 2 minutes less baking time than indicated in the recipe and watch them from there, as every oven is different.
- Allow the donuts to cool completely before topping them with glaze and Fruity Pebbles cereal.
- Don’t want pink? Use a different color of food dye to match a different party theme.
- When making up the glaze, add the milk one tablespoon at a time to get the right consistency.
Frequently Asked Questions:
You do need to remember to grease your donut pan very well before adding the mixture to it. Otherwise, they will stick. Using a cooking oil spray will work for this.
Course you can! Just choose a different size donut pan for the mixture. You could also make more than suggested here by doubling up the quantities. Freeze a batch for when you have that sweet craving.
How to Store Fruity Pebbles Donuts
The best way to get the most out of these donuts is to store them in a sealed container. They will last up to four days at room temperature in the pantry.
You can also freeze the unfrosted donuts in an airtight container for up to three months. Defrost in the refrigerator for 24 hours before glazing and decorating.
