Easy Red Velvet Sandwich Cookies

Red velvet cookie sandwiches are soft, sweet, and the perfect bite sized version of your favorite red velvet cake. Enjoy them for holidays, parties, or even as an afternoon snack.

you'll need:

Eggs

Oil

Cake Mix

Frosting

Step 1

In a large mixing bowl combine red velvet cake mix, vegetable oil, and eggs.

Step 2

Fold together until you see no more pockets of dry cake mix. The batter will be thick.

Step 3

Use a small cookie scoop to measure out evenly sized dough balls.

Step 4

Scoop onto a prepared baking sheet, and bake at 350˚F for 10 minutes.

Step 5

Spread cream cheese frosting on the bottom of a cooled cookie.

Step 6

Place the bottom of another cookie on top to create a sandwich.
